Peanut Butter & Jelly Protein Bar



Craving something sweet and savoury? Need a quick on-the-go snack 'cause you're crunch on time? Look no further: this nutrient-packed PB & J bar is the perfect fix that'll let you munch anywhere and anytime!


I've been prepping batches of this beauty every single week and still can't get over it. It's crunchy on the outside, but becomes soft and chewy once you bite into it. Peanut Butter (and Jelly) lovers, this one's for you.


Ingredients:

  • Mixed nuts

  • 5-6 dates 

  • Dash of water or milk of choice

  • 1 tsp vanilla extract

  • 1/3 cup jam (I've experimented with strawberry and orange jams - loved both!)

  • Pinch of salt

  • Dash of milk or water (to combine the ingredients)

  • *Opt:*Peanut butter to smear on top :) 


Instruction:

  • Blend all ingredients in a food processor or blender

  • Bake at 180 degree Celsius for 15-20 minutes

  • Smear some peanut butter on top & store it in the fridge


You can throw in any ingredient that's been lying in your fridge. I've mixed in chocolate spread, honey, flax seed, sesame seed, etc. and enjoyed every recipe I've made so far. In fact, I'll be making a fresh batch tomorrow and cannot wait to experiment with more ingredients!
