Nothing strikes home like a sweet, simple and savoury Peanut Butter & Jelly sandwich. This morning, I decided to whip up my own blueberry-chia jam, which delightfully consists of two main ingredients: frozen blueberries and chia seeds.
This recipe isn't only quick and easy to make, but it's also refined sugar-free, energy-packed, and full of fibre.
Ingredients:
1 cup frozen blueberries
1 tbsp chia seeds
*Opt: You may season however you'd like. Some honey & a tiniest pinch of salt may be great options
Instruction:
Warm up your frozen blueberries in a saucepan (low heat). Stir frequently.
Once the berries have thawed, add in the chia seeds and continue to stir for 5-6 minutes. You may add your optional ingredients at this point, or pour in some water if the mixture is too thick.
Store the jam mixture in a fridge (it'll continue to thicken)
If you are hosting a potluck, making a few peanut butter sticks as your appetizer could be a fun and creative way to elevate a simple recipe. However, to fancy up my palate, I spread my toast with natural crunchy peanut butter, homemade blueberry-chia jam, and topped it with some sliced bananas, dark chocolate, and a dash of cinnamon.
